Butternut Squash Beef Stew 21 Day Fix Approved


Ingredients:

1.5 lbs of stew meat cut into 2 inch cubes

1 bag of fresh stewed veggies from Wegmans or you can add red potatoes, 1 sliced sweet onion, 1 1/2 cups of celery, 1 1/2 cups of carrot sticks

1 1/2 cups of baby portobello mushrooms

2 can of organic diced tomatoes with no salt added

1 cup low sodium organic beef broth or more depending on how liquidly you like it

fresh basil

1 tsp of sea salt & Ground Pepper

Fresh Rosemary

2 cups of cubed butternut squash

Makes 6-8 servings

I add each ingredient as follows beef broth first, followed by the can of tomatoes, then the meat, sea salt, ground pepper, basil, then the vegetables/potatoes, portobello mushrooms, butternut squash and then sprinkle the fresh rosemary on top.

I cook on high for 6 hours & serve with organic rosemary olive oil bread for the kids to dip into the stew.

We all walked in the door & the house smelled heavenly, especially because at 6:50 we were all starving!

I hope you all enjoy this as much as we do. Feel free to let left overs cool off & freeze for future lunches or dinners.

Following the 21 Day Fix plan: 1 red, 1 1/2-2 greens, 1/2 yellow (I usually only have 1small red potato in my dish.
