Baked Chicken Tacos
I love sharing this recipe because it's healthy, quick & a huge family hit in our home. I have had so clients rave about how they are enjoying this meal. This is great to serve when hosting a dinner because it does make 12 tacos, enough to serve people or if you have three hungry athletes in your home like I do it will be enough to feed your family of five.
Ingredients:
1 box or organic taco shells
1 packet of organic taco seasoning or taco seasoning that is considered clean (just spices) or look below for my taco seasoning
shredded Mexican cheese (made with hormone free milk)
1 can of black beans no salt added
1 cup of fresh pico degalo
1 sweet onion
2 plain rotisserie chicken
1 tsp of onion oil
fresh cilantro
Homemade Taco Seasoning:
1 tablespoon of chili powder
1/4 garlic powder
1/4 onion powder
1/4 dried oregano
1/2 smoked paprika
1 1/2 teaspoons of ground cumin
1 teaspoon of himalayan sea salt
1 tsp of cayenne pepper
So how do we make these delicous tacos? Very easily. Put the oven on at 375 degrees. While the oven is heating, slice up your onion & heat a pan with 1 tsp of olive oil. Once that heats up cook the onion for 4-5 minutes. While you cook the onion throw the spices together if you didn't purchase the taco seasoning and remove the skin from the chicken to start shredding into pieces. Then after the onion is done cooking add the chicken to the plan with 2/3 cup of water, followed by the taco seasoning. Mix together in the hot pan for 1 minute. Took the pan off & grab a large cooking dish to bake the tacos in. You want to start filling each shell of the taco by layering it with a good amount of chicken, then 1 tablespoon of pico, 1 tablespoon of black beans & a pinch of shredded cheddar. Then after you fill all the tacos up you will place the dish into the oven for ten minutes. While this is cooking you want to wash your cilantro & chop it up. Feel free to slice up some fresh avocado as well. After your dish is done cooking, sprinkle the fresh cilantro all over the dish. You will want to use rubber tongs when grabbing these out of the baking dish and placing onto your plate.
