No Bake Energy Bites
As a mom of three teenagers that play sports all year long it is super important to me to find recipes or food that can help my children fuel their bodies properly. I may not be able to control the food choices they are making when they are out with friends, but I can control what is in our home and what I am chosing to feed them. These energy bites do not last long in our home, are simple to make, are great fuel for the kids and it's a snack they love (I do as well). It's also something I feel really good about them having. I have a few recipes that we all happen to like, but this one seems to be our favorite. I am excited to share it with you and I am hoping you and your children love these as much as we do!
Let talk about what ingredients you will need:
1 cup of group flaxseed meal
1/2 of Enjoy Life dark chips or dark chips made with pure cacao
1/2 cup of all natural peanut butter or almond butter (no oils or sugars added to the peanut butter)
1/3 cup of pure honey or pure maple syrup
a dash of pink himalayn salt
1/2 cup of unsweetened flaked coconut
1/4 cup of raw organic chia seeds
1/4 cup of raw crushed pecans

So lets talk about how we make makes these delcious little energy bites. First we crush the raw pecans. Then we put the coconut flakes, ground flaxseed meal, chia seeds, chocolate chips, chocolate daily sunshine and mix them all together. Then you add the honey and peanut butter. Now mix everything together again. Wash your hands, then leave them a little damp to mix everything with your hands. Now that it's mixed well you want to roll the mixture into balls.
Now that the mixture is all rolled up and turned into little tasty energy bites you will want to place them in a container and then into the fridge for an hour before serving. Two to three of them are a great serving size and provide healthy fats, proteins magnesium, iron, calcium along with omega 3-6. Hope you enjoy these as much as we all do!
