Dairy & Gluten Free Chocolate Caramel Apples
My family and I have been lovers of any kind of caramel apple combination. My parents recently brought up a huge box of apples straight from an orchard in New York. I get so excited for this yearly apple gift from them. A little over 11 years ago my son was diagnosed with food allergies. I remember him thinking he would no longer be able to enjoy any of his favorite foods especially with being allergic to corn. I quickly found out how corn syrup was in just about everything. I suddenly found myself as his mom on a mission to learn how to make the things he enjoyed eating healthier. What I also discovered is it opened my eyes to seeing the we food we kept in our home in a whole new way. So many things I thought were healthy for us were not. They were not only affecting my son, but my entire family. I also learned why I was having such a difficult time avoiding the nightly sugar indulgences as I learned how addictive these items were. I went from thinking I had no will power and something must be wrong with me to feeling incredibly empowered as I learned how to fuel my body properly and make the things I personally enjoyed eating healthier as well.
You may be thinking what is so bad about caramel apples. Well the apple itself is fine but we used to buy Wrapples. The ingredients in those are not only addictive but wreak havoc on our well being. This ingredient list is loaded with unhealthy ingredients and it also contains bioengineered ingredients as well.
Lets get the ingredients for the chocolate caramel covered apples:
4 large apples or 6 medium apples
16 organic dates (pits removed)
1/4 cup of almond Malk Milk
1/4 cup 1 Teaspoon of organic coconut oil
1 1/2 tablespoon of organic peanut butter ( no sugar or oils added to it)
1 teaspoon of organic vanilla
2 cups of Pascha chocolate chips (you can use FRESHFITKATE15 to save 15% off your online order on their website).
I was going to use my food processor to mix everything but it broke so I needed to put everything in my blender. To make the caramel dip I blended the dates, Malk milk, vanilla, peanut butter and 1/4 cup of melted coconut oil. You will need to use a spatula to make sure its all blended and smooth. It took me 4 minutes to blend this.
I took chop sticks and put those in the center of the apple. Then placed them on parchment paper. I covered each apple with the caramel. I then took the chocolate chips along with the 1 teaspoon of coconut oil and melted them on the stovetop. I placed a little bit of the melted chocolate in the bottom of a glass bowl and then dipped each apple in there, then drizzled the rest of the chocolate over each apple. I put them in the fridge for 20 minutes and then were ready to bite into or slice.
