Dairy & Gluten Free Chocolate Toasted Coconut Popsicle Recipe
This was my first recipe to ever go Viral and for good reason because they taste as good as they look!
If you’re looking for a healthy gluten & dairy free indulgent tasting treat that’s not loaded with sugar then you’ll want to hit save on this reels: https://www.instagram.com/reel/CrRKpBTJCPB/?utm_source=ig_web_copy_link&igsh=MzRlODBiNWFlZA== & put it in your instagram recipe folder. Did you know you could do this? I have a folder for recipes, travel, home ideas etc.
Enough chatting lets get to it. Lets grab the ingredients and make these!
Ingredients:
2 cans of organic coconut milk (use one whole can and then just the thick creamy coconut from the second can not the liquid)
2 Tablespoons of organic maple syrup
2 tsps of cinnamon
1 tsp of Organic vanilla
1/4 cup of organic coconut shreds
Place all the ingredients in the blender then pour into a popsicle mold and place into the freezer for 24 hours. You can grab the mold here: https://amzn.to/4dqdrTm
The next day remove the popsicles from the mold and place on parchment paper. I melted an entire bag of chocolate chips (use a gluten & dairy free no added sugar one) and while those melt I added 1 tsp of organic coconut oil to a pan to toast 3/4 cup of organic coconut until it’s toasted. You can also use ghee or grass fed butter if you can tolerate dairy.
Dip the popsicle into the melted chocolate and then sprinkle the toasted coconut on top, place on the parchment paper. Then back in the freezer until you are ready to enjoy them.
Tip: Let them sit out in the counter for a good 10 minutes before sinking your teeth in- trust me on this one.
Let me know when you try this recipe or feel free to tag me on Instagram. I can’t wait to hear what you think of them ❤️ My hope is you enjoy them and it helps you get a healthier treat into your home for you and your family to enjoy!
