Easy Meal Prep Recipe That Turns Into 3 Dinners

I have heard you. You have been telling me you are short on time, want to eat healthier and make meals your whole family will like but just the thought of meal prepping anything and finding recipes seems stressful. It doesn't have to be, it truly doesn't. I want to help you make next week so much more less stressful when it comes to the above things you have shared with me. So lets get to work!


First thing to do is buy these ingredients to make Green Chile Shredded Pork:

  • 4 pork tenderloins (around 3lbs) I grabbed mine from Costco

  • 1 large onion, diced

  • 3 bell peppers, chopped

  • 8 cloves garlic, minced (or frozen cubes are a huge time saver)

  • 1 10-oz. can mild green oraganic enchilada sauce

  • 1 4-oz. can diced organic green chiles

  • 2 Tablespoons of Primal Palate Organic Taco seasoning (gluten free, Siete makes a good taco seasoning as well)

  • 2 tsp. redmond salt (buy online https://glnk.io/oq72y/freshfitkate enter "freshfitkate" at check out to save 15% or buy at Whole Foods)

Make sure you grab pork tenderloin and not pork loin. The loin will not turn out nearly as tender. I cut each of the loins up into 4 large chunks prior to cooking. Your meat should shred easily, that is when you know it is ready to be served. Simply add all of the ingredients to a crockpot on low for four-to-six hours or until tender. If you work from home you can do this during the day otherwise cook on Sunday when you are home form work. Shred it in a separate bowl and add the juice from the crock pot to keep it from drying out. This recipe will make plenty of protein to serve 4-5 people for 3 nights of dinner. If you are serving 2-3 people you will have plenty to freeze and use for dinner the following week or two.




Dinner 1 is tacos!!!

1 package of Siete wraps ( best price is 20 of them at costco in the freezer isle)

1 package of Tillamook Mexican Cheese

2 peppers

1 large onion


I sautéed the peppers and onions and while they cooked I place the wraps on my flat top. Added the cheese and then the shredded pork to each one. Folded them over and served with a large side of Mexican Slaw and pickled onions. You can serve with any side of vegetable you would like or that your family likes, frozen may bee the quickest option for you. Maybe steaming vegetables in the microwave is easiest for you while everything cooks. This dinner is ready within 15 minutes, even less then that if you slice the peppers, onions and sauté them over the weekend or the night before.




Dinner 2 is a Mexican Salad:

1 large package of organic greens ( any salad mix your family likes)

1 can of shoepeg corn

Pickled onions ( make sure there are no added chemicals if you are not making these homemade)

1 container of organic salsa

Good Culture sour cream


Place the lettuce in a bowl. Top with all the toppings, I also added Mexican slaw but you could any vegetables you would like. I do not add any dressing because all the toppings add so much flavor you do not need it. Add the Green Chile Shredded Pork on top and enjoy!

Third Dinner Recipe is Mexican Shredded Pork Stuffed Sweet Potatoes:

Organic Sweet Potatoes (however many you need to fee each family member)

1 package of Tillamonk mexican cheese

Good Culture sour cream

1 large purple onion

2 green peppers

pickled onions

Mexican Slaw


I bake my sweet potatoes. I love placing parchment paper on a cookie sheet, coating each washed potato with olive or avocado oil and then sprinkling with salt before placing them in the oven for an hour to bake at 425 degrees, but if you do not have the time to do that you can throw them in the microwave. I just try to stay away from cooking food in the microwave personally. You could cook these the night before and then place in your fridge once they've cooled off. You will want to sauté the peppers and onions (remember I shared above how to save time) Once you pull them out of the oven slit the potatoes open, then place the cheese in each of them followed by the shredded pork, sautéed peppers and onions, pickled onions and then a side of slaw. These are so delicious and filling. If your family doesn't like sweet potatoes thats okay, grab whatever potato they do like, we just happen to love these as a family.


I hope this makes serving healthy dinners so much easier and enjoyable for you and your family! All you have to do this weekend is head to the grocery store with your list (if you want to make the Mexican slaw don't forget to add those ingredients) grab everything you don't already have it home and feel good about the plan in place you have for next week. If you are unsure what to serve the other nights, keep it simple. Grill a protein along with vegetables and serve with a healthy carb one night and the next night make crock pot chili or soup and serve with a salad or lost of vegetables. We are so good at over complicating things, so take a deep breath, get excited you have a plan in place for next week and enjoy how much easier your week will be when it comes to dinner time. Oh and enjoy the money you save from having food delivered or eating out!!! That is always helpful too!

  • Primal Palate Organic Taco seasoning (gluten free, Siete makes a good taco seasoning as well)

  • Redmond salt
