Erewhon Inspired GF+DF No Bake Cinnamon Rolls Recipe




Back in May my husband and I stopped at Erewhon when we were in Beverly Hills after traveling all day from Charleston. We were so hungry and it's never a really great idea to go to any kind of grocery store hungry but instead of browsing we got in line to grab dinner first. We had the best dinner and smoothies. My husband had a white fish and I had salmon. I also had their famous buffalo cauliflower which were so good as well. After we ate dinner we walked around the store and I was taking it all in. I love smaller grocery stores that fill their shelves and isles with healthiest items they can find. I ended up seeing that they had these no bake gluten free & dairy free cinnamon rolls that looked so delicious. When I looked at the ingredient list I was so excited to see how clean it was and I said to my husband I bet you I can make something similar at home so that is exactly what I did. I am so excited to share this recipe with you and my hope is you enjoy them as much as we did.


Cinnamon Roll Dough Ingredients:

  • 1 2/3 cup of Glyphosate free oat flour (I made my own using these oats: https://amzn.to/4f5bJao )

  • 1/3 Almond Flour

  • 1/3 Organic Peanut Butter (no added sugars or oils)

  • 4 Tablespoons of Organic Maple Syrup

  • 1/4 cup + 1 Tablespoon of Cashew Malk Milk

  • 1 tablespoon of Organic Vanilla

  • 1/2 teaspoon of baking powder



Filling Ingredients:

  • 10 organic dates (pit removed)

  • 1 heaping tablespoon of organic Saigon Cinnamon

  • 2 Tablespoons of Cashew Malk Milk

  • A pinch or two of Maldon Salt https://amzn.to/489EfFu


Lets make these! First put all the ingredients for the dough in a food processor. Mix until the dough is formed. Grab parchment paper and lay the dough on top. Then place parchment paper on top to roll out. I find this helps the roller not to stick to the dough. After you have flattened it out throw all the ingredients for the filling in the food processor. Mix until its all sticking together like the dough was. Take the filling out and roll out on top of the dough. Place the parchment paper back ton top then plan on to a baking sheet and into your freezer for 40 minutes. Take out of the freezer and roll the dough up. Then slice into pieces. This made a total of 12 no bake cinnamon rolls. I store them in a glass container in the fridge or you can always place back in the freezer then just let them thaw when you would like to enjoy. I have never had a cinnamon roll I have not liked unfortunately when I have had them I end up not feeling so great because of the ingredients. Thankfully I can enjoy one of these and continue to keep feeling good! I absolutely love being able to take the things my family and I enjoy eating, and learn how to make them healthier.
