Gluten & Dairy Free Chocolate Chocolate Chip Peanut Butter Ice Cream Recipe


I am so excited to share this recipe with you! I have always been an ice cream lover and it was one of the things that helped me gain a lot of weight. Ice cream was what I turned to almost nightly and it was not the healthiest ice cream at all. It was loaded with added sugars, syrups and unhealthy ingredients. Although it tasted good, it never left me feeling great and the sugar cravings would feel out of control, so typically another serving happened often. When I began my wellness journey over ten years ago I needed to lose weight to get myself in a healthier weight range and I knew this time needed to be different. So instead of feeling like I could never enjoy my favorite foods again especially as an ice cream lover, I began to learn how to make the things I loved to eat in a healthier way. Over the years this recipe has just gotten better and better so I can not wait to share this with you. It's easy, delicious, satisfying and doesn't make you feel like you want to eat all the things after you indulge in this.


Ingredients:

  • 1/4 cup of Cashew or Almond Malk Milk (make sure there are no added sugars or xanthan gums or carrageenan)

  • 4 large frozen bananas

  • 3 Tablespoons cup of Organic Cacao Powder

  • 1 tablespoon of Organic Peanut Butter (make sure there are no added oils or sugars to yours)


Lets make this! Blend everything but the peanut butter and chocolate chips in a blender. I use a tamper in my blender. I typically blend for two minutes making sure everything is mixed smoothly. Then I top my serving of ice cream with peanut butter and chocolate chips. Everything else goes in a glass container in the freezer. This makes four servings.
