What to serve them on or with? Over mixed greens, large romaine lettuce leaves, bibb lettuce, large pepper or cucumber slices to scoop them up with, baked sweet potatoes or slices, homemade sourdough bread or Masa Tortilla or Vandy chips to dip with. Let's get the ingredients:

  • 1 whole Rotisserie chicken (can shred your own chicken at home)

  • 1/4 red onion

  • 3-4 stalks of organic celery

  • ½ cup of Mayo (make sure there are no seed oils or gums)

  • Lilies bbq sauce 

  • Primal Kitchen Buffalo Sauce


Let's make the chicken salads. First thing is to remove the skin and then shred the chicken. I use a hand mixer to shred the chicken, it makes it easier and saves time. I dice up the red onion and celery. I take the shredded chicken and divided it into two bowls. I add ¼ cup of mayo in each bowl, then split the onion and celery in half giving each both equal amounts. I then put bbq sauce in one bowl and buffalo in the other. I pour a little bit and add as needed. Mix them both up. Place in glass containers and now you have two flavorful grab and go protein options in your fridge. So easy right?
