Gluten Free Hair Of The Dog Tacos

A little over 6 years ago when we moved to Charleston my husband and I thought it would be fun to try a new restaurant out on date nights. The first restaurant we stopped at was a small Mexican restaurant just footsteps away from the beach. We both found something on the menu that sparked our attention. They were tacos that were called “hair of the dog”. We found ourselves enjoying these tacos so much that anytime we would return we didn’t need a menu we knew what we were ordering. They eventually took these off their menu and around that time we decided we did not want to keep eating out because as much as we enjoyed the taste of everything, we never felt well afterwards, especially me. I always found myself returning home very bloated, stomach aches and not feeling my best. we would much rather have a date night at home where we are either cooking together or for each other. Last saturday my husband spent the entire day working really hard on our backyard so I decided I was going to surprise him with my own version of Hair of the dog tacos for our at home dinner date and let me tell you we both gave these a 10/10. Truly the best tacos I have ever made. The best part was we both felt great afterwards and it’s one of the reasons I could not wait to share this recipe with you. Trust me when I tell you, you are going to want to make these!

Let’s make these delicious Hair Of The Dog Tacos. First you will need all of these ingredients:
4-6 Masienda organic Corn tortillas (depends on if you want to eat 2 or 3)
Organic cilantro
1 avocado diced
1 lime
1- 1 ½ cups of cheese you shred yourself (I will share why this is important below)
4-6 organic pasture raised eggs (1 per taco)
1 package Chorizo (make sure it’s gluten free, no fillers, unhealthy additives or ingredients)
1 red onion diced
1 large organic sweet potato diced
Organic coconut oil
1 tablespoon Siete Taco seasoning
Now it’s time to make everything. I place three stainless steel pans on my stovetop along with a cast iron flat top skillet. I heat them all up while I dice the sweet potato (I like to bake this to get it halfway cooked prior to slicing and dicing) along with the onions. By the time those are both done being chopped up it’s time to put each of those in a pan along with cooking the chorizo once that is cooked through I cooked the eggs in that pan. I add coconut oil to each pan and season the sweet potatoes with a tablespoon of the taco seasoning. While those are all cooking I chopped up the cilantro, sliced the limes into quarters, sliced the avocado in small squares and shredded the cheese. I then place the corn tortillas on the flat top once everything in the pans are finished cooking. I then place the cheese followed by the onions, chorizo, sweet potatoes and lastly the eggs on top of the corn tortillas. I plate the tacos then sprinkle the cilantro on top along with avocados and the limes on the side of the plate. Then savor and enjoy these 10/10 tacos.
These are so filling and flavorful that I never ended up using the sour cream I added to my plate nor are sides necessary. The best part was knowing all the ingredients were healthy and to be able to continue feeling my best after savoring this date night meal together. I am so excited for you to make these! One more thing I want to share with you about why I shred my own cheese. Did you know that pre-shredded cheese often contains anti-caking agents and preservatives to prevent clumping and extend shelf life?
What you will want to do is check the packaging to look for some of the common additives:
1 Anti-Caking Agents (Prevent Clumping)
• Cellulose Powder - A plant fiber (often from wood pulp) used to keep shreds separate.
• Potato Starch - Absorbs moisture and prevents clumping.
• Calcium Sulfate - Also used to reduce moisture and keep cheese from sticking together.
2 Mold & Bacteria Inhibitors (Preservatives)
• Natamycin - A natural antifungal that prevents mold growth.
• Sorbic Acid - A preservative that extends shelf life by preventing spoilage.
Why do we want to stay away from this additives? These additives can be gut irritants, disrupt digestion, and contribute to inflammation. If you have gut issues or an autoimmune disease or you are just looking to be healthier so you can feel your best it's best to stay away from these and just shred your own cheese.
