Gluten Free Viral High Protein Sweet, Spicy & Savory Bowl

Have you tried the viral high protein bowls that seem to be sweeping over social media? I feel like I may be very late to the party just discovering this recipe myself. I am not sure who thought up this high protein (over 40 grams), fiber, healthy carbohydrate, healthy fat, sweet & spicy combination but I want to say thank you because this dinner was a 10/10 so easy to make and the flavor it punches will make all your taste buds very happy. I was so happy my favorite organic lactose free cottage cheese was in stock so I could make this recipe last night. I am not a huge fan of cottage cheese but could not imagine enjoying this recipes without.
Lets gather the ingredients I used (will make 3 bowls)
1 package of grass fed organic lean ground beef
2 large organic sweet potatoes
1 container of organic Good Culture lactose free cottage cheese
1 ½ avocado
1 package of Reiga Organic barbacoa Taco Seasoning (gluten free)
Mikes Hot Honey
Maldon Salt
Organic Cilantro
Let's make the bowls:
Peel the sweet potatoes, then dice them up. You can bake in the oven at 400 degrees for 30 minutes or you can cook in a healthy oil in a stainless steel or cast iron skillet. Once they are cooked sprinkle ¼ of the taco seasoning on the potatoes along with Maldon salt, stir it in. As the ground beef is cooking you will want to chop up your cilantro along with your avocado slices. Once the ground beef is cooked you will add the rest of the taco seasoning. Mix it in well. Now it's time to make the bowls. Add ⅓ of the ground beef you cooked, ⅓ of the sweet potatoes, ⅓ cup of the cottage cheese, ½ sliced avocado, drizzle the hot honey and sprinkle the cilantro on top.
