Peach Salad, Candied Pecans & Vinaigrette Dressing Recipes


The last thing most of us want to eat are boring salads and often we think when we want to lose weight we’re not going to be enjoying food like we normally do. I remember thinking that when I first started my journey and thankfully I learned that wasn’t true! I am excited to share this recipe with you, let me know in the comments if you also want the candied pecan and vinaigrette dressing recipes as well

Ingredients:

  1. Large container of organic greens ( I like butter lettuce best)

  2. Two sprigs of Fresh mint (tear them into small pieces)

  3. Homemade candied pecans

  4. 3 peaches (sliced into small squares)

  5. Goat cheese

  6. Homemade Citrus vinaigrette dressing

Vinaigrette Dressing Recipe:

3 tablespoons fresh squeezed Lemon Juice

3 tablespoons organic pure Maple Syrup

1/4 cup organic cold pressed virgin olive oil

1 teaspoon Dijon mustard

1/2 teaspoon of organic basil

1 clove garlic finely chopped

1/4 teaspoon @redmond salt

1/4 teaspoon black pepper

Shake all the ingredients together and it's now ready to be enjoyed.

Next let’s make the make candied pecans healthier than store bought 🙌🏼

1 tablespoon of grass fed butter (I use Kirkland brand from Costco)

1/4 cup of organic brown coconut sugar (Big Tree Farm brand)

1 cup of pecans

Turn your burner on to medium. Okay butter then sugar then nuts and keep mixing everything until nuts are coated. Cook for five minutes and move around the mixture often.That’s it! This sugar is organic unrefined and low glycemic.


It’s so simple to make. Make the candied pecans and dressing then grab a large bowl. Add the lettuce, mint, peaches, goat cheese, candied pecans and dressing. Then add a healthy protein, like grilled chicken and enjoy!!


I can’t wait for you to enjoy this flavorful healthy salad without the sugar spike from the dressing and candied pecans which are normally provided from a salad like this 🙌🏼
