Summer Salad & Hot Bacon Dressing Recipe
Lets turn a boring salad into flavorful and delicous dish that is loaded with vegetables, protein and healthy fats!
Ingredients for Salad:
1 rotisserie chicken
1 large container of organic greens (any kind you like, enough to feed your family)
4 ears of grilled corn
1 large avocado
1 container of goat cheese

Ingredients for Hot Bacon Dressing:
3 slices of cooked nitrate free bacon (no added sugar)
2 garlic cloves minced
3 Tablespoons of Apple Cider Vinegar
2 teaspoons of organic coconut sugar (Big Tree Farms)
2 teaspoons of dijon mustard
1/4 teaspoon of salt + pepper
Lets make the dressing:
Cook the bacon, you can use the remaining fat in the dressing but it’s optional. Crush up the bacon and add it to a glass jar with all the other ingredients and shake well. You will shake well again right before drizzling it on your salad.
Lets make the salad. Start by grilling the corn for a good 15 minutes on your stovetop or your grill, turn every couple of minutes to get all the sides cooked. Slice up the chicken while the corn is cooking and this is also a great time to make the bacon dressing. Then add the salad to the bowl and start adding all the toppings listed above.
