Green Egg, Waldorf & Dill Chicken Salad Recipes
I hope you enjoy these recipes! Over the years I have served this on homemade sweet potato slices, tortillas, sourdough bread, lettuce cups, over greens or use pepper slices to scoop it up, so many different ways to enjoy this. This is a great grab & go option especially when you need to get more protein in your day.
Waldorf Chicken Salad Ingredients:
1 pound of shredded chicken (organic is best)
3/4 cup of Chosen avocado Mayonnaise
8 organic celery stalks
1 organic red onion
3 organic Granny Smith apples
2 tablespoons of fresh organic chopped chives
So easy to make. Chop everything up as finely as you can and then mix everything together. That’s it.
I did choose not to use grapes and use green apples over red. Green apples are lower in carbs and provide more iron, potassium along with protein. Did you know this?
Green Egg Salad Ingredients (High in protein, healthy fats & Fiber, low in carbs):
2 avocados
10 hard boil eggs
2 tablespoons of avocado or homemade mayonnaise
1 lime juiced
one small bunch of organic chives minced
salt & pepper to taste
Mash everything together, then serve these in lettuce cups, baked sweet potato slices or homemade sourdough bread-delicious.
Dill Chicken Salad Recipe:
1 pound of shredded chicken
3/4cup of Chosen avocado Mayonnaise
8 organic celery stalks
8 dill pickles (make sure the ingredient list is clean)
1 bunch of Organic fresh dill chopped
So easy to make. Chop everything up as finely as you can and then mix everything together. That’s it.
It’s so nice to have a flavorful healthy protein like this as a grab n go option in your fridge. So many different ways to serve it and enjoy it through out your week.
